I figured these might just brighten your week! I don't know what it is about unicorns. Maybe it's the soft pastels, or childhood fantasies or just because they are simply gorgeous whimsical creatures! Despite it all, it was time to create a unicorn cupcake....
Unicorns are everywhere nowdays. Make these are you'll definitely be in on the trend. Whether it's unicorn chocolate bark, unicorn lattes, unicorn cakes or giant pink unicorn phone cases, they're everywhere!! Sooooo, what's better than this gorgeous creature as a cupcake? ;P
The flavour of these cupcakes is inspired by the traditional royal berry cake that has been a favourite with mums of the 'edmonds cookbook' era.... aka my mum esp! The cake is a light and delicious blueberry vanilla madeira. I like to use a 'reverse creaming' method for all my cakes and cupcakes. This means the dry ingredients are mixed with the butter to form a mixture resembling dry crumbs. The liquid ingredients are then added to create a thick and creamy batter. As a result, the cakes turn out with a beautiful tight texture and rich flavour. In turn, this method creates the perfect cakes for layering...
The icing is inspired by the 'real fruit' strawberry ice creams you can buy from strawberry farms in summer. For the most authentic strawberry flavour, I use Fresh As freeze dried strawberry powder. Creating: A cupcake with pretty much a soft serve on top!
Anyway, time to get busy this week.... preliminary exams have officially arrived!!! (last ones!)
