If you love cookies, caramel, crunchiness, dessert & gingerbread then why not combine them all? And, have them for BREAKFAST!! yum!
This last week has been filled with chaos as we prepare to launch our Foundry Collective marketplace. However, I just couldn't resist coming up with a recipe you could have for both breakfast and dessert, or, anytime of the day really!
The flavours of these cookie sandwiches are inspired by the classic sticky date puddings. It is typically a moist sponge cake made with finely chopped dates and served with a toffee sauce and vanilla ice cream. Only originating in the 1970's, this dessert has since been wildly popular in Britain, managing to maintain its place in the world of desserts today. Fair enough too! A good old sticky date on a cool winter evening is heaven! I recently put a spin on this classic by creating a ginger sticky date with a brandy butterscotch and served it with toasted sesame ginger snaps (comment below if you would like the recipe!). And soooooo, I have combined two classics in one. Gingerbread and sticky date. BAM. Dessert and breakfast. DOUBLE BAM. Granola and ice cream sandwiches. TRIPLE BAM!! :D
Anyway, please go ahead and give these a go! I have adapted the recipe to cater for guests. Simply freeze the cookie dough and pop them in the oven when ready to serve. The ice cream can be kept in the freezer and the sauce, kept in the fridge then heated in the microwave. So there you have it, simple and delicious Gingerbread and sticky date cookie caramel sandwiches!
