Don't you just love the strawberry season! The first of the berries have just become ripe so here's to a long and hearty season!
Strawberries have always been the main summer fruit in my house. Growing up, we had many fond memories of real fruit icecreams after a hot salty day on the beach. Mum would use them in salads, in smoothies and frozen desserts. But perhaps my fondest memory acquainted with this fruit is my granny. Every year without fail, mum would buy a huge punnet from our local strawberry farm. She would bake two round sponge cakes and sandwich them with freshly whipped cream and a huge helping of the sliced berries. To top it off, she would drizzle over a gorgeous pink icing. And it would be finished. Grannies perfect strawberry cream sponge cake was the staple for my summer birthday! So these jars are basically inspired by the love I have for this special summer fruit and the memories of my grandma. They're decadent, cool for hot days and extremely easy to serve!
This dessert starts with a peanut and white chocolate shortcake crumble. The addition of peanuts gives the crumble a delicious toasted and nutty flavour however the white chocolate is added to allow pops of sweetness.
A white chocolate mousse is then added. Prepare yourself for richness, creaminess and extreme fluffiness! This component acts as the 'cream' of the shortcake.
To finish it off, fresh strawberries and the remaining crumble is used.... the end result = A creamy, crunchy and irresistibly decadent shortcake which leaves the fresh strawberries as the star.
