Happy spring, people!
I think I fall in love with every season. As soon as a new season rolls around, I remember how much i've been missing it. The flowers, the damp grass and the light, crisp mornings. The lambs, the knee length socks and fields of daisies. Seriously, what's not to love?!
Ever heard of a smoothie bowl? They're so popular at the moment. Mum used to make berry smoothies for us kids before school. A tall glass of ice cold smoothie was the perfect start before a busy day at school. So I suppose smoothie bowls were invented for when we grow up and our smoothies become so big they need bowls. lol. And, of course for those who like to sit down and enjoy the first meal of the day.
If you're short of time, go ahead and make these in a glass so you can enjoy yours on the go. Theyre so versatile and good for those who prefer a lighter breakfast in the morning.
This smoothie bowl is absolutely delicious. I've created the recipe so you can basically customize it with whatever fruit is in season. Simply grab your bananas and blueberries from the freezer and add a little honey, acai, almond milk and vanilla. Just 6 simple ingredients you can have at hand all year around.
It doesn't matter what you top your smoothie with. Being spring, I like to toast coconut and granola for a bit of crunch. I then add chunks of mango. I find having a bag of frozen mango chunks does the trick however there's something so good about fresh, sweet, sun kissed Australian mangoes!
You may also be wondering what is acai? Don't be worried if you've never heard of it before!
The acai I use in this recipe is found in a dried powder form. Acai berries are basically berries found in the Amazon rainforests. They are a small purple berry which are very fragile so sadly we can't get them fresh in NZ. However, the flavour in the dried powder form is a great substitute! As well as being extremely high in antioxidants (great for your skin!) they are also high in fibre. So basically this smoothie will keep you going all morning!
Anyway, feel free to go crazy with your topping. Make the most of the spring season and go seasonal. Fill up your bowl with bright and happy colours. Most importantly, don't forget to smile :)
