I've been quiet for a while.
Busy, busy busy.
Then I realised, life only gets busier. So here you go. Salmon + Sriracha Mayo Sushi Donuts. Anyone who knows me well will know that I am obsessed with asian cuisine. The freshness and vibrancy of the flavours and textures are so exciting on the tongue and good for the soul. So these sushi donuts are the latest inspiration. My brother isn't a fan of sushi simply because of the use of seaweed. Don't ask me why, maybe it's just the concept or simply because he is fussy! Anyway, these are an ode to him. Simple, fresh and fast.
I recently made these for a light dinner with honey soy marinated chicken and steamed bok choy. However these are great for making in advance for work or school lunches and storing in the fridge. If you're feeling super organized, make a batch on the weekend and you'll be sorted for Monday. Just watch out for office envy!
You'll want to serve these with a good quality soy sauce. My favourite soy sauce is the one by mama san. I discovered this sauce at a go to lunch spot in Auckland called &Sushi. It comes in an iconic red-topped pourer so it's instantly recognizable and definity the most user friendly! Just be careful not to tip it as the sauce comes out both sides and you'll end up with soy sauce all over your kitchen floor like I did! If you are making these in advance for a work lunch, you'll want to pour some sauce in a little container so you don't forget on your way out the door in the morning...
